Título: | Evaluation of the effectiveness of weak oscillating magnetic fields during freezing carried out in systems of different complexity |
Autor: | Rodríguez, Antonio C.; Pérez-Mateos, Miriam CSIC ORCID CVN ; Careche, Mercedes CSIC ORCID ; Sánchez Alonso, Isabel CSIC ORCID ; Escribano, M. Isabel CSIC ORCID ; Sanz Martínez, Pedro Dimas CSIC ORCID; Otero, Laura CSIC ORCID | Fecha de publicación: | 2018 | Citación: | 48th West European Fish Technologists Association Meeting (2018) | Resumen: | The effectiveness of weak oscillating magnetic fields (OMFs) in improving freezing kinetics and reducing damage in frozen/thawed systems was assessed in ferric chloride solutions, lactate dehydrogenase (LDH), and hake mince infected with Anisakis simplex larvae. To do so, freezing experiments were performed in a lab-made magnetic freezer at different conditions (0, 0.33, 0.8, 1.5, and 7 mT at 50 Hz). Weak OMFs produced no significant effect on freezing kinetics of FeCl3 solutions, LDH activity cryoprotection, water-holding capacity of the hake mince, or viability of Anisakis simplex larvae. Further studies are needed to evaluate the effectiveness of stronger OMFs in a wide frequency range. | Descripción: | Resumen del póster presentado al 48th West European FishTechnologists Association Meeting (WEFTA), celebrado en Lisboa (Portugal) del 15 al 18 de octubre de 2018. | URI: | http://hdl.handle.net/10261/171787 |
