ResumenIn order to estimate thermal properties of conduction heated food simultaneously using hotwire probes, the information content of an experiment should be maximised. In the present work optimal (dynamic) heat generation profiles as well as an optimal location to measure temperature response in the food product were computed based on modern global optimisation algorithms. Implementation of these optimal heating profiles showed that more accurate and unique estimates were obtained
