Las principales líneas de investigación que lleva a cabo son: Evaluación de componentes bioactivos y componentes de la pared celular involucrados en la calidad nutricional y sensorial de los alimentos vegetales durante el procesamiento y almacenamiento; Revalorización de los subproductos de la industria alimentaria como fuentes de ingredientes alimentarios funcionales; Identificación de melatonina en matrices alimentarias y estudio de su influencia en el estrés oxidativo.
