ResumenThe manufacturing, at industrial level, of mussel canning in brine has stability problems concerning the cannery means. In this paper we carry out a study about manufacturing of mussel canning in brine to stablish the processing conditions for a guaranty canning. Three kinds of sterilization were essayed: 115º C-90 minutes, 115º C-60 minutes and 110º C-105 minutes, using OL-120 tins. Every sterilization series included samples of precooked mollusks at different times and temperatures. The results showed that in the work conditions we have followed, a guaranty canning was obtained. The yields were very similar in all cases, as though the mussel weight losses are higher according to the precoction times increasing, during the sterilization these losses are equated.
