Abstract[EN] The invention relates to a method for controlling Cronobacter sakazaldi in liquid infant milk fonnula with cocoa, characterised in that in comprises the steps of: a) treatment by means of high-intensity electrical impulses, b) refrigeration, c) subsequent addition of cocoa rich in polyphenols, and d) refrigeration.
[ES] Procedimiento para el control de Cronobacter sakazakii en fónnula láctea infantil liquida con cacao caracterizado porque comprende las etapas de: a) tratamiento mediante pulsos eléctricos de alta intensidad, b) refrigeración, c) adición posterior de cacao rico en polifenoles y d) refrigeración.
