AbstractThe 3rd International Symposium on Propionibacteria and Bifidobacteria: Dairy and Probiotic Applications (Propiobifido2010), was held in Oviedo (Spain) in June 2010. The Symposium was part of a series starting in France in 1995. The first three Symposia of this series were focused on dairy propionibacteria (Rennes 1995, Cork 1998 and Zurich 2001). The fact that propionibacteria and bifidobacteria share some common research interests prompted the Organizer and Scientific Committees to redirect the scope of the Symposium including bifidobacteria together with propionibacteria. This led to the organization in 2004 (Saint-Malo, France) of the 1st International Symposium on Propionibacteria and Bifidobacteria: Dairy and Probiotic Applications followed by the 2nd International Symposium held in Wadahl, Norway (2007).
