Digestion of milk proteins: Formulation and absorption of bioactive peptides

AbstractThe evaluation of changes that bioactive components undergo in the organism after ingestion are of importance, since digestion can release peptides with physiological implications. In this presentation, we will illustrate with several examples on proteomic analysis of in vivo gastrointestinal digests and their comparison with simulated gastrointestinal digestion in vitro. We will also present last results on in vivo bioavailability of bioactive peptides and changes that take place during absorption, distribution, metabolism and elimination.
