[EN] The industrial processing of mussels in Galicia generates large volumes of relatively glycogen-rich wastes that, freely poured into the sea, only contaminate the coastal ecosystem. In this paper, their possibilities of treatment are studied, with the double objective of reducing their contaminant impact and creating a way of using them that provides inventives for their depuration. The results obtained after assay, in several situation of a process directed to SCP production, have permitted us: a) to obtain a small peptide fraction separable, without cost additional to the rest of the process during the waste treatment prior to their use as a microbiological medium; b) to reduce by more than 80% the COD remaining after the pretreatment, by means of different cultures of several yeasts species and a fungus, able to be used as SCP sources; c) to obtain a SCP production comparable to or better than those acivied by other authors in the treatment of residual or low-cost substrates; d) to facilitate substantially, with respect to the process applicable to the crude wastes, the possible recuperation of taurine from the postincubated medium; e) to establish the criteria for the possible P and/or N supplementation of some lots of wastes, in order to attempt the complete glycogen degradation by the selected species. These results have also permitted us to establish some hypotheses to improve of the process, on which we are now working
[ES] El procesado industrial del mejillón en el litoral de las rías gallegas genera grandes volúmenes de emisiones relativamente ricas en glucógeno que, vertidas libremente al mar, no constituyen sino un factor contaminante del sistema costero. En este trabajo se estudian sus posibilidades de tratamiento, con la doble finalidad de reducir su impacto contaminante y crear una forma de aprovechamiento que incentive su necesaria depuración. Los resultados obtenidos después del ensayo, en diversos supuestos, de un procesado tendente a la producción de POU, han permitido: a) obtener una pequeña fracción peptídica separable, sin costo adicional sobre el resto del proceso, durante el tratamiento de los vertidos previo a su utilización como medio microbiológico; b) reducir en más de un ochenta por ciento la DQO remanente después del pretratamiento, mediante diferentes modalidades de cultivo de diversas especies de levaduras y un microhongo susceptibles de utilización como fuente de POU; c) obtener una producción de POU comparable, incluso con ventaja, a las conseguidas por otros autores en el tratamiento de sustratos residuales o de bajo costo; d) facilitar sustancialmente, con respecto al proceso aplicable a las emisiones brutas, la posible recuperación de la taurina a partir del medio postincubado; e) establecer los criterios para la posible suplementación en P y N de ciertos lotes de emisiones, en orden a conseguir la degradación total del glucógeno presente por las especies seleccionadas.
