Desarrollo de nuevas metodologías para la extracción y fraccionamiento de compuestos bioactivos (principalmente carbohidratos) a partir de matrices complejas. Desarrollo de nuevos métodos basados en técnicas cromatográficas y su acoplamiento a la espectrometría de masas para el análisis de compuestos bioactivos en alimentos y productos vegetales.
