El grupo estudia el papel de las proteínas y péptidos alimentarios como compuestos bioactivos. Esto incluye la identificación de proteínas y péptidos con propiedades beneficiosas para la salud o que pueden reducir el riesgo de padecer determinadas enfermedades: antihipertensivos, antioxidantes, antiproliferativos, inmunomodulantes, relacionados con la función intestinal y con las patologías que caracterizan al síndrome metabólico; así como aquellos que pueden actuar como alérgenos alimentarios. Se aborda su caracterización química y bioquímica y se evalúan sus propiedades biológicas, para profundizar en la relación existente entre estructura y actividad. También se estudia su digestibilidad gastrointestinal y su biodisponibilidad, así como los beneficios y riesgos que comportan para la salud humana. Además de investigar sobre las funciones de las proteínas y péptidos en el mantenimiento de la salud, también se utilizan sus propiedades espumantes, emulsificantes y gelificantes para mejorar la textura de los alimentos y contribuir a la innovación gastronómica. Para ello, el grupo cuenta con expertos en técnicas electroforéticas, cromatográficas, espectrometría de masas, cultivos celulares, modelos animales, expresión génica, tecnología culinaria y análisis sensorial.
