El objetivo general del grupo es aumentar las propiedades saludables de la fracción lipídica de los productos derivados de rumiantes (lácteos y carne). Mejora del perfil en ácidos grasos de productos lácteos y carne de rumiantes, modificando la alimentación del ganado principalmente con suplementos ricos en PUFA o mediante la utilización de microorganismos probióticos. Estudio la calidad y trazabilidad de la fracción lipídica de productos lácteos enriquecidos durante los diferentes procesos tecnológicos y posterior conservación. Estudio de la fracción lipídica en leche humana incluyendo componentes minoritarios pero de elevada actividad biológica (CLA, fosfolípidos) Desarrollo de métodos cromatográficos para identificación de componentes minoritarios en lípidos. El objetivo final es la obtención de productos y derivados lácteos y de rumiantes que aporten un valor añadido a la salud humana.
