En los últimos años, las líneas de investigación del grupo se han enfocado hacia el estudio de carbohidratos de bajo índice glucémico y con propiedades prebióticas, dado el interés mostrado no solo por parte de los investigadores y la industria, sino también por los consumidores, hacia los beneficios potenciales de dichos carbohidratos en distintos aspectos relacionados con la salud. Por ello, actualmente una de las líneas principales de trabajo es la obtención, caracterización y evaluación de las propiedades bioactivas y tecnológicas de nuevos carbohidratos y derivados para su posterior utilización como ingredientes alimentarios. Gran parte de nuestra actividad investigadora se centra en la síntesis enzimática y caracterización de potenciales oligosacáridos prebióticos utilizando diferente tipos de enzimas (comerciales y nuevas enzimas modificadoras de carbohidratos) y subproductos de la industria alimentaria (quitosanos, permeado de suero de quesería y pectinas procedentes de naranja, girasol y alcachofa) con el objeto de mejorar la gestión de los residuos generados en las industrias pesquera, láctea y transformadora de frutas y hortalizas. Asimismo, se llevan a cabo diferentes estudios para optimizar el fraccionamiento, la caracterización y la evaluación de las propiedades bioactivas (prebióticas, anti-adherentes, anti-inflamatorias, etc.) y tecnológicas (estabilidad durante el tratamiento térmico y conservación, propiedades reológicas, entre otras) de los nuevos carbohidratos sintetizados para elucidar sus aplicaciones potenciales.
