This article reviews developments for the analysis of molecular species of triglycerides, including stationary phases, mobile phases, sample solvents, detection and identiRcation. It also points out the advantages of silver-ion HPLC and emphasizes the need for stereospeciRc analysis in the complete determination of triglyceride molecular species because currently this is not possible by reversed-phase HPLC.
