Abstract[EN]The novelty of the invention consists in the revalorization of the extracted pulp, a waste by-product derived from the extraction of oil from olives which, after being subjected to a steam explosion process, has allowed all the mannitol present therein to be separated out and recovered, and which, by means of various simple purification stages (ultrafiltration, ion exchange and fractionated crystallization) permissible in food technology, has achieved a yield with a high degree of purity.
