Abstract[EN]The novelty of the invention consists in the revalorization of the extracted pulp, a waste by-product derived from the extraction of oil from olives which, after being subjected to a steam explosion process, has allowed all the mannitol present therein to be separated out and recovered, and which, by means of various simple purification stages (ultrafiltration, ion exchange and fractionated crystallization) permissible in food technology, has achieved a yield with a high degree of purity. [ES]La novedad de la invención consiste en que se ha revalorizado la pulpa extractada,un subproducto residual de la extracción de aceite de olieva que, tras ser sometida a un proceso de explosión al vapor, ha permitido el aislamiento y recuperación de todo el manitol presente en la misma y que, mediante varios pasos sencillos de purificacion (ultrafiltración, intercambio iónico y cristalizacion fraccionada) admitidos por la tecnología de alimentos, ha conseguido obtenerlo con un alto grado de pureza.
