Nuestros estudios están relacionados con el desarrollo de alimentos funcionales con valor añadido (principalmente productos lácteos), mediante la mejora de las características de su fracción lipídica, para cubrir las necesidades nutricionales básicas y las demandas de los consumidores de alimentos más saludables y seguros. Estos estudios se realizan mediante intervenciones dietéticas en modelos animales y en humanos, y permiten correlacionar, mediante herramientas analíticas las variaciones que ocurren tanto a nivel fisiológico como en fluidos y tejidos biológicos con el consumo de un alimento o ingrediente. Línea de investigación: Estrategias para el enriquecimiento de componentes lipídicos minoritarios pero de elevada actividad biológica como CLA, ácidos Omega-3, fosfolípidos y esfingolípidos, para la prevención de enfermedades cardiovasculares, deterioro cognitivo leve asociado a la edad y mejora del desarrollo cognitivo de recién nacidos.
